Easy Dahi Bhalla chaat

Dahi Bhalle is Indian traditional dish made from urad dal, white lentils. White urad dal is nothing but split black lentils without black cover. Black split lentils can be used in place of white lentils by removing its outer cover.

To remove outer cover, after soaking dal it needs to be rubbed to remove outer cover and it will become white lentils, that can be used for making Bhalla.

Dahi Bhalla is ball shape fried dish but soaked in water to remove oil. Dish served as side dish or as starter, in north India. These are ball shaped bhalla are soaked in yogurt and top with spices , chutney

Ingredients:

  • Split urad dal 1 cup
  • Yogurt 2 cup
  • Roasted cumin seeds powder 1/2 tsp
  • Chaat Masala Powder 1/2 tsp
  • Salt to taste
  • Red chili powder 1/3 tsp
  • Gram Masala 1/4 tsp
  • Sugar 1/2 tsp
  • Black salt powder 1/2 tsp
  • Cashew 4-5 chopped for filling (optional)
  • Oil for frying
  • Green Chutney 3 tbsp
  • Red sweet Chutney 3 tbsp

 

Method:

  • Wash Urad Dal and soak it for minimum 4-6 hours, Overnight soaking is best for have good Bhalla.
  • If black dal is used remove the cover and grind it to make thick batter. Use little water to grind it.
  • Thickness of batter should not be pouring like batter, its thick consistency batter.
  • Take out the mixture from grinder to bowl and beat it for 10-15 minutes (beating will help to make soft Bhalla, more beating)
  • Add salt to it batter, mix well and keep it aside for 10 minutes.
  • In a bowl add thick yogurt(dahi) and add ½ cup water and beat properly so it won’t have any lumps.
  • Now add black salt, table salt sugar and mix well. Keep it in fridge for 10 minutes
  • Add salt, Chili powder and cumin seeds powder to chopped vegetable and mix all together. Divide yogurt in 2 parts and add ½ cup more water to 1 part of yogurt.
  • Keep deep fry pan on stove and add oil to it for frying.
  • Make balls of dal batter and carefully insert cashews in each ball, cashews should not be on outer side of ball, otherwise it will pop in oil.
  • When oil is medium hot (not very hot), fry bhalla in oil on medium flame, till it changes it color to little brown (don’t cook of high flame, Bhalla will not cook from inside).
  • Take out Bhalla from oil and place on absorbent paper. Now add warm Bhalla to warm water to get soaked for 2 minutes. Take it out from water and Press Bhalla to remove excess water. Soak it in that part of yogurt, prepared with more water. let it stay in yogurt for 2 more minutes.
  • Placed soaked Bhalla on serving place, top with other part of yogurt, salt, red chili powder, roasted cumin seeds powder, chaat masala, green chutney and sweet chutney.
  • You can ass boiled potatoes and boiled chickpeas to it if you want.
  • Dahi Bhalla is ready to Serve.
