Indian Style Veg Poha  – vegan

Poha is flattened rice or beaten rice , Veg poha is quick and easy Indian breakfast recipe. Veg poha is light weight and low fat food, good for health too. Veg poha is made of Flattern rice which is avaible in market in many options , thin, thick and medium. I like to use thick poha, which can be washed and soaked properly. But if thick poha is not available, thin or medium poha can be used but need not to soak(avoid breakage) just wash it and use.

Veg poha is made with flatten rice with vegtables , peanuts and spices. Its very easy to make veg poha. Lets see Ingredients and method to make veg poha.

Ingredients:

  • Poha/Flatten rice  2 cup
  • Green bell Pepper 1 medium
  • Tomato 1 medium
  • Green peas 1/3 cup (optional)
  • Onion Chopped 1 medium (optional)
  • Oil 1 tbsp
  • Green chilies 2
  • Mustard seeds 1 tbsp
  • Salt to taste
  • Chili Powder 1/3 tsp
  • Turmeric powder 1/2 tsp
  • Lemon Juice 2 tbsp
  • Tomato ketchup 3 tbsp
  • Peanuts 1/2 cup

Method:

  • Wash poha and soak poha for 2 minutes(skip soaking if using medium poha or  just sprinkle some water on poha if using thin poha, more water will break poha)
  • Drain water from poha and keep it aside.
  • Chop Tomato, green pepper, green chilies and keep it aside.
  • In a deep pan heat oil and mustard seed and let it crackle. Add onion and let it cook for 1 minute till it change its color.
  • Add turmeric powder, tomatoes, chili powder peas, green chilies, green pepper, salt and cover it lid. let it cook for 2-3 minutes so everything cook well.
  • Mix Tomato Ketchup in vegetables and mix well. add poha and mix everything together and cover it for 2 minutes. Poha will absorb flavors of veggies and spices.
  • Add lemon juice, Peanuts and mix well.
  • Veg poha is ready to serve.
