Traditional Gajar ka Halwa

Happy New Year to all Foodies…Today, I am sharing Traditinal recipe gajar(carrots) ka halwa. Gajar ka halwa is gajar(carrots) cooked on low-medium flame in richness of milk. During winters it is very popular sweet in India. Lots of nuts and richness of milk make it so yummy. I remember, when my mom used to make Gajar ka halwa in winters, we use to fill our bowls with halwa (that time nobody cares about calories…. Lol) when it’s still on flame, we didn’t have so much patience at time to wait for it to cook completely.

Carrots are primary ingredient in gajar halwa and nuts are as per anyone choice. It take sweetness of love and patience to have traditional taste, and need to be cooked on low medium heat.

Ingredients:

  • Full Fat Milk 1 liter
  • Carrots / Gajar 2 kg
  • Sugar 1 cup(depending on your taste)
  • Khoya / Mawa/ Milk solid 1/2 cup(grated)
  • Ghee 2 tbsp
  • Chopped nuts 1 cup (Almonds, Cashew, Walnuts, can be replaced with any other)
  • Raisins (optional)

Method:

  • Wash carrots(gajar) and peel them. Grate carrots(gajar) with the help of grater and keep it aside.
  • In a heavy bottom pan boil milk, add grated carrots(gajar) and let It cook on low medium flame so carrots will cook well in milk.
  • When milk is all soaked in carrots, add khoya/mawa and mix well.
  • Keep stirring on medium flame so whole khoya will melt and mix in carrots.
  • When it got thick, add sugar and keep stirring. After adding sugar, it will little water but will evaporate. When water get evaporated and it come together again. Add ghee and Chop nuts to it. And let it cook for 2 minutes on medium high flame.
  • Switch off the flame, Gajar ka halwa is ready. Serve Warm.
