Moth chole sprout chaat

Moth chole sprout chaat is one of my favorite breakfast , full of  protein, sweetness of fruits , tangy flavor of sauces and lemon. These are very healthy and i like its tangy spicy flavor but it can be reduced as per taste.
Mooth chole is very famous in our city in North India and it’s not raw sprouts but steamed moth sprouts and chickpeas. In this recipe I am using 4 lentils/dal sprouts and beans but more whole beans can be added as per taste and liking.

Ingredients:

  • Whole Moong dal 1/2 cup
  • Whole moth 1 cup
  • White kidney beans (lobiya)  1/3 cup
  • Chickpeas 2/3 cup
  • Salt to taste
  • Chili powder 1 tsp
  • Lemon juice 2 tbsp
  • Red turmind sauce 1 tbsp
  • Green chutney 1 tbsp
  • Green chilies chopped 1 tbps
  • Turmeric powder 1/2 tsp
  • Dry mango powder 1/2 tsp
  • Roasted cumin seeds crushed 1/2 tsp (optional)
  • Chopped banana 1 optional
  • Tomato chopped 1 Medium size
  • Chopped onion 1 (optional)
  • Ripe Papaya Chopped 1 cup
  • Ripe banana 1 medium size chopped

Method:

  • Wash and soak moong , moth and kidney beans together for 5-7 hours or overnight.
  • Wash and soak chickpeas separately.
  • In morning or after 7 hours drain water. Put soaked lentils and beans in net or Muslim cloth to drain all water . Hang it for 10 minutes.
  • when whole water get drained. Keep it at hot place in a bowl cover with lid or you can keep in casserole covered for 6-7 hours, to get them sprout.
  • Add water in pressure cooker with some salt to boil chickpeas. (Cannned chickpeas can be used instead of soaking and boiling).
  • Add all sprouts in a pressure cooker with 1/3 cup water , salt and turmeric powder and let it cook for 1-2 whistle steam. Switch off the flame and let it cool down.
  • In a big bowl add steamed sprouts , chickpeas salt, chili powder, green chilies, chopped tomatoes, chopped banana, papaya, chutney, dry mango powder, cumin seeds powder and mix well.
  • Serve Immediately .

NOTE: Fruits need to be mix at the time of servicing. Don’t keep fruits for long time in moth chole. It will loose its texture.
