Easy malai kulfi recipe

Summer is here again so let’s welcome summer with Delicious kulfi.

Traditional malai kulfi was made from malai, milk used to boiled and reduced to 1/3 of it and malai on top of it (top layer of fat on boiled milk) get mixed and condense that gives crumbly texture to ice-cream. That time it used to take lot of cooking time to make malai kulfi but in today’s time not nobody has much time for cooking. So today we are sharing easy malai kulfi recipe that take time only to freeze but cooking time is very less.

We will be using only main 3 ingredients milk, khoya/mawa(milk solids) and sugar or sweetener you can use sugar free or stevia to make it sugar free. Nuts are optional but we like add chopped almonds in malai kulfi that gives crunch to kulfi.

It’s very easy recipe, for this we need to boil milk in a pan and add khoya/mawa or milk solids in it, mix well till khoya/mawa get melt. Add sugar and boil for one minute. That’s it. Add nuts and set it in freezer for 8-10 hours. See now it can be prepared without hours of cooking and taste exact same as of traditional malai kulfi. As khoya/mawa milk solids provides crumble texture to kulfi, which malai used to give in traditional kulfi. So now nobody needs to wait so long to make kulfi. Summer time more refreshing cool drinks and ice-creams at vegflavors.

I have seen many people add a lot of things in everything but that feels like taste of original dish get lost in too many flavors, like adding chocolate syrup, fruit crush etc. That gives extra flavors to ice-cream, but I like to keep it simple and have its original taste, but if you like and want you add chocolate syrup or any fruit syrup or crush, that works well too.

Let’s see ingredients and proper method to make malai kulfi.

Ingredients:

  • Milk 400 ml
  • Khoya/mawa/Mawa/ milk solids 100 gram
  • Sugar 3-4 tbsp as per taste
  • Almonds 8-10

Method:

  • Chop almonds and keep aside
  • Grate khoya /mawa and keep in a bowl
  • In a pan boil milk and add khoya/mawa in it. Keep stirring khoya/mawa may get stick to bottom of pan. Low flame to low- medium and mix khoya well in milk.
  • When khoya get melt, add sugar in it and mix well. Boil for few seconds so sugar get mix with ice-cream without clusters.
  • Add chopped almonds and switch of flame, let it cool down. Set it in freezer in airtight container for 8-10 hour.
  • Cut it in to pieces or server immediately. Enjoy chilled kulfi.
