Baked cheesy vegetables
Baked cheesy vegetables full of energy and easy to make with less preparation, only baking takes time. Baked cheesy vegetable is healthy meal with lots of protein and vegetables. Easy to make for family on weekends and have nice family time. Vegetables here can be used in variations, broccoli optional, beans zucchini can be added as well etc. as per taste and choice.
Ingredients:
- Mini potatoes 1 lb.
- Green bell pepper 2 medium size
- Tomato 2 medium size
- Onion 3 medium size
- Cottage cheese /paneer 300 gram
- Broccoli 150 gram (optional)
- Green beans 100 gram
- salt to taste
- Black pepper 1 tbsp
- Tomato ketchup 2 tbsp
- Olive/vegetable oil 3 tbsp
- Pameson cheese 2 tbsp(optional)
- Mozzarella cheese 4 tbsp
- Cedar cheese 2 tbsp
- Italian seasoning 1 tsp
Method:
- Wash all vegetables and cut in 1.5-inch cubes. Cut cottage cheese in cubes as well.
- Cut mini potatoes to half or 1/4 in size.
- Add olive oil to potatoes and toss it with salt and some pepper.
- Preheat oven at 400-degree ferry for 10 minutes.
- On a baking pan spread potatoes and bake for 20 minutes. After 20 minutes toss potatoes and mix other vegetables and cottage cheese cubes.
add salt and Italian seasoning and mix well. - Place baking pan in oven and bake vegetables on 400-degree f for 30 minutes. Flip vegetables in between so it will cook evenly from all sides.
- Spread tomato ketchup, sprinkle cheese and bake for 10 more minutes.
- After 10 minutes serve hot.
