Achaari Paneer

Achaari paneer (Cottage Cheese) paneer cooked with spicy Achaar marination. Achaar is tangy pickle made in India. I am using here spices, for marination, that is used in India to prepare pickle. This dish adds nice flavors to main course and add healthy portion of protein in healthy course of food. Achaari paneer is different variation of paneer dishes on vegflavors.

INGREDIENTS:

  • Capsicum 1 small size cut in 1-inch cubes
  • Paneer 2 cup cut in 1-inch cubes
  • Onion 1 medium chopped cut in cubes
  • Tomato 1 small chopped in cubes
  • Tomato puree 4 tbsp
  • Mustad Oil 1 tbsp
  • Kalonji / black cumin/ Nigella sativa ½ tsp
  • Fenugreek seeds ½ tsp
  • Saunf /Fennel seeds ½ tsp
  • Deggi Red chili powder 1 tsp
  • Crushed coriander seeds 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Green chilies chopped 1 tbsp(optional for mild version)
  • Dry Mango powder 1 tbsp
  • Salt to taste
  • Garam masala powder 1/3 tsp

METHOD:

  • On a flat pan add 1/2 tbsp mustard oil and little roast paneer and capsicum cubes. When they tun little brown swith off flame and keep it aside.
  • In a deep pan add remaining 1/2 tsbp oil add Fenugreek seeds, kalonji, Fennel seeds , turmeric powder and crushed coriander seeds , let it roast a bit.
  • Add onion cubes, green chilies, tomatoes and cook for 1 minute. If it come out dry add 2 tbsp of water and cover it to cook.
  • Mix tomato ketchup to onion tomatoes mixture and cook so all come together.
  • Add roasted paneer and capsicum along with remaining dry ingredients (red chili powder, dry mango powder, garam masala powder)
  • Add salt and cover for 2 minutes .
  • Please note don’t overcook. After 2 minutes switch off flame and serve with any flat bread or roti.
