Masala Bhindi – no onion no garlic

Bhindi also known as okra. People might know bhindi as bhindi dopyaza, bhindi with onion etc. but today, I am sharing recipe here, is without onion and garlic. Some people fry bhindi and then add masala but in this recipe does not need to deep fry or doing anything like that. Easy to cook and can be served with roti, pratha or with dal-rice.

Ingredients:

  • Bhindi(okra) 250 gram
  • Besan (gram flour) 1 tbsp
  • salt to taste
  • Crushed roasted cumin seeds 1/2 tsp
  • Red chili powder 1/3 tsp
  • Green chilies split 2-3
  • Amchoor (dry mango powder) 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Coriander powder 1 tsp
  • Mustard oil 1 tbsp
  • Ghee (clarified butter) 1 tbsp

Method:

  • Wash and Cut the edges of bhindi and discard edges. Make a split in length wise and don’t cut in 2 parts just split it so masala with get into bhindi. Cut split bhindi in size you want in length, I prefer 2-3-inch length.
  • In a heavy bottom pan, dry roast besan and keep it aside.
  • Heat mustard oil in pan and add coriander powder, turmeric powder, red chili powder and roasted it for few seconds
  • When masala get roasted, roasted besan and mix well.
  • Add green chilies, bhindi and add amchoor powder to it, mix well. (Amchoor powder keep its slimy texture away, and give it tangy flavor some people use turmind pulp instead of amchoor that work same way). Cover pan on low flame for 4-5 minutes (make sure flame is low).
  • After 2-3 minutes add salt and check if bhindi is cooked. If not cooked cover for 2-4 minutes more on medium low flame so bhindi cook well.
  • Add ghee to cooked bhindi and roast it so it will become crisp and masala cover bhindi properly. Don’t over flip bhindi while roasting. Carefully roast it. Add roasted cumin seed and sever hot with roti, pratha or with dal rice.
